A Night with Pineau des Charentes

In celebration of Bastille Day, I recently attended a dinner hosted by Pineau des Charentes. When invited, I truthfully had never even heard of Pineau, and I’m always keen to take in a new experience- especially one involving wine from France!

My dear friend Charlie and I showed up to a private dinner hosted in Hollywood and were introduced to Pineau des Charentes. Called “Spirited Wine”, Pineau is a fortified wine from fresh grape juice that has been blended with Cognac. It’s produced exclusively in the Cognac region of France, and you guys, it is DELIGHTFUL. When we showed up for dinner, we were greeted with a simple cocktail called the P+T. It’s a blend of white Pineau, Fevertree Tonic, grapefruit and thyme. In this overwhelming summer heat, the P+T was a refreshingly smooth way to begin the evening.

Throughout the night, we tried various Pineaus and learned the history of this unconventional wine. Legend has it that Pineau was discovered in France when a wine-grower carelessly threw grape must into a barrel containing Cognac eau-de-vie. Years later, the barrel was discovered and with it a unique drink! And that it is. Every cocktail throughout the night was surprising and inventive, and was perfectly paired with our endless course French cuisine from chef Igor Ladyjensky.

From Warm oysters with caviar and duck fat, to Veal tartare with truffle and a quail egg, the dinner was everything rich and ambient as one would expect from the French. We dined for hours, sipped endless amounts of Pineau, and learned both ways to cocktail it as well as drink it neat. With each course came a new perfectly matched tasting.

The P&T
Ingredients:
– 1.5 oz White Pineau
– .75 oz Fever Tree Tonic

Directions:
– Build over ice in Rocks glass

Garnish: Sprig of Thyme, Grapefruit Twist

I spent my 33rd birthday in England.
With friends, at a wine bar, then out later for dancing.
33 is the Jesus year. I remember the year approaching, feeling excited, overwhelmed, and completely shocked that I was actually 33. Already. How did that happen? Life- it just goes and goes and turns and sometimes we find ourself in spaces we never would have foresaw.

It’s no secret that I love Toast- so much so that I wrote a book about it!

One of my favorite things about hosting is the ability to cook for anyone, regardless of their dietary restrictions and needs. I met the folks from Kite Hill last year, and absolutely love their perspective on food and hosting… Plus, their products are so darn good. They make amazing almond based cheeses and yogurts- and I literally have not tried one thing that I don’t love- and I’m not even vegan!

As we draw close to the end of the year, I wanted to be sure to practice slowing down, being present in the midst of a busy season, and reflect on the year with loved ones. I invited over close friends for an intentional evening to celebrate 2017 with some delicious bites and cocktails made with Chareau’s Aloe Liqueur!

the darling x aerie retreat: some recipes!

hi friends! Hope your week has been amazing so far. A few weeks back, I got to partner up with two AMAZING brands, Darling Magazine and Aerie and had the opportunity to host and cook for their retreat! We invited 20 women, and together spent a weekend in the Hamptons having some quality intentional rest time. We ate like queens, swam in the pool, I taught a personality workshop, and we explored the Ocean shore. The weekend was absolutely dreamy. Cooking for 20 women can be overwhelming, but with the help of my assistant and a few simple and beautiful recipes, the weekend was overwhelmingly enjoyable. I wanted to share a few of my favorite recipes with you that are some go-to’s for groups like this!
