A vegan ricotta + almond + lemon + basil TOAST with Kite Hill

It’s no secret that I love Toast- so much so that I wrote a book about it!

One of my favorite things about hosting is the¬†ability to cook for anyone, regardless of their dietary restrictions and needs. I met the folks from Kite Hill last year, and absolutely love their perspective on food and hosting… Plus, their products are so darn good. They make amazing almond based cheeses and yogurts- and I literally have not tried one thing that I don’t love- and I’m not even vegan!

This past week, I partnered with my friends at The Arc Shop in LA to host a little TOAST party before I hopped over to England for a few months. I made three recipes- and wanted to share this one with you! It’s a vegan ricotta magical toast with lemon, basil, and almonds and it. is. DELIGHTFUL.

Kite Hill Ricotta + almond + lemon + basil toast

2 slices good bread (I used a seeded multigrain from Whole Foods)
1/4 cup Kite Hill ricotta
2 Tbsp honey roasted almonds
2-3 large basil leaves, chopped
zest of one lemon
olive oil

Toast your bread!
Spread each slice with 2 Tbsp ricotta.
Sprinkle with almonds, lemon zest, and basil.
Drizzle with honey and olive oil and serve!
