the snap piña colada

You know those times where you just need a good old midweek pause? When you need a little extra pick-me-up to propel you through the remainder of the work week? This week is one of those weeks for me. Generally, my Wednesday pick-me-ups include whiskey. But this week I’m mixing it up with a snap piña colada- a refreshing and creamy treat that gives you that nice tropical vacation in-a-glass feel. Made with coconut milk, pineapple, and one of my favorite liquors, it’s an easy and delightful treat to give yourself that much needed break this week.

The piña colada is such a fun drink because it instantly transports you to a state of relaxation. The pineapple, coconut, and even the tiny umbrella hanging off the edge of the cup, it’s all synonymous with being beachside. In fact, some of my favorite vacation memories are sipping on a cooling piña colada with friends.

This week I’ve been thinking a lot about change, and the ways that our lives are shaped by the people around us. My mom used to say “show me your friends and I’ll show you your future” – instilling in me the importance of healthy and well-rounded relationships. I like reflecting on the ways that we change over the years- moving into different spaces in our lives, being carved out by circumstances, joys, and trials.

This week, if you have time (or are in desperate need) of a pause, make a little drink for yourself and a friend, and reflect on the ways your circumstances have shaped, and are shaping the person you’re becoming. To change and grow, we have to remain interested. So be interested in your own story and share it over a little piña colada.

The Snap Piña Colada

2 parts SNAP spirit (Art in the Age)
1 part pineapple juice
1 part coconut milk
1 lime

In a shaker, mix your Snap, pineapple juice, coconut milk and a large scoop of ice. Squeeze in the juice of one lime. Shake well and serve in a tall glass with extra coconut and sliced lime.
