TWO HEALTHY GO-TO’S FOR AN EASY WEEKEND BRUNCH

The holiday season is here and with it comes so many shared meals! If you’re hosting a brunch this winter, try out these two quick, clean, and simple recipes I shared on The Brekkie Series with Lightworkers!

Baked Oatmeal

Makes 6-8 servings

2 cups rolled oats
3 cups almond milk
2 eggs
Fruits of your choice
Dash of cinnamon
Dash of salt
2 tbsp honey
1 tbsp vanilla

Preheat your oven to 375°. Mix all ingredients together in a bowl. Pour into a baking dish and cook for 30 minutes!

Seasonal Frittata

Makes 6-8 servings

8 eggs
1/2 cup milk
Dash of salt + pepper
Your choice of veggies (I used spinach, bell pepper, and diced tomato)

Whisk together eggs, milk, and salt + pepper in a mixing bowl. In a skillet, add some olive oil to medium-high heat, and partially cook your veggies. Add the egg mixture to the skillet and cook for 3 minutes. Place the whole skillet in the same oven (at 375°) and cook for another 10 minutes, or until it has fully set. Drizzle with any condiment of your choice (I love Sriracha!).
