the perfect summer salad

About a week ago, two of my favorite LA women came over to play and style some fun dishes at the loft. I am such a fan of having people in my space- maybe it’s the hostess in me, but I actually feel more known when I have the opportunity to welcome friends in and spend afternoons lingering over good food. The darling Jen from The Effortless Chic and Amanda Gallant came over after a chaotic week, and we spent a few hours playing with ingredients, recipe dreaming, and practicing the art of slowing down and just hanging out together. This salad is a go-to for me every summer. With fresh corn and the bite of the red onion, it’s an easy and delicious way to get that fix of summer flavor.

With simple recipes like a summer salad, I find that I’m able to throw a quick and beautiful dish together for those times when a friend decides to swing through for a quick bite. It’s always a great idea to have a handful of easy go-to recipes that require little effort but offer incredible satisfaction. And, to change up flavor now and then, it’s great to play with various make-at-home dressings, giving that extra kick to any bed of greens.

I like to think that even in my adult life, summer is a season worth investing in. I love that even the air of summer brings a childlike anticipation of pool-days, longer nights, and more time spent with the people I love. This recipe is one that is versatile, requires little effort, and is delectably delicious. Dive in!


  • arugula
  • fresh corn cut from the cob
  • cucumber
  • red onion
  • avocado

For the Dressing:

  • 1/4 cup olive oil
  • 1/4 cup white wine vinegar
  • 2 tsp honey
  • dash of sea salt

Fill a salad bowl or plate with the arugula then top with remaining salad ingredients. In a separate bowl mix together all dressing ingredients and stir repeatedly until well combined!

This salad goes great with grilled chicken or steak if you’re wanting a little extra protein! Or, try a poached egg- it goes great with the arugula!
