turmeric + apple + carrot soup

Turmeric! It’s the main spice in curries, and is arguably the most powerful herb for your body. In fact, turmeric has been found to have benefits that are equivalent to many pharmaceutical drugs. It’s a miracle worker, and so delicious to cook with. It’s anti-inflammatory, increases antioxidant capacity in the body, is linked to brain function, rumored to lower the risk of brain cancer, and is known to help prevent some cancers. Magical right?!

One of my favorite things to make during a busy week is a pot of soup. That way, when I get home from a long day, I’ve got a vat of deliciousness waiting for me. Along with a slice of crusty bread or a salad, this turmeric + apple + carrot soup is the perfect one pot go-to dinner that also fuels your body with all the delightful perks of eating well.

Turmeric + Apple + Carrot soup

1 cup water
2 cups chicken or vegetable stock
4-6 large carrots, chopped
1 apple, peeled and cored
1 tablespoon turmeric
Salt and pepper
1/2 cup almond milk or regular milk

Bring your water and stock to a boil. Add your carrots and apple. Bring to a simmer and allow to cook for about 15-20 minutes or until carrots are soft.

Remove from heat and place the mixture in a blender or vitamix (or use a hand blender right there in the pot). Add your turmeric and blend until everything is mixed together.

Place back in the pot and season with salt and pepper. Stir in your milk, and heat to serve!

This soup is great leftover, as the flavors continue to combine!

Serve with fresh parsley, creme fraiche or greek yogurt.
