weekend waffles with berries and honey

Waffles for the weekend! I love Fridays. There is something so celebratory about knowing you’re heading into a weekend!

I’ve been working on a new series this month on Instagram called Dismantling Shame. The idea is simple- just offering some fun stories, tidbits, tools to get a little more free in life.

WaffleFreedom seems to be the mantra I’ve banked my life on. That we as humans are creatures who can be on journeys to get more free in life- more self loving, self accepting, with a stronger sense of identity and purpose. To become more free though, we must get rid of shame. It’s like a sneaky little bugger that keeps us drowning in self-loathing. Shame breeds in fear and loves that dark.

My 20s were full of shame… and unknowingly! It wasn’t as though I was walking around thinking I was shameful. But I did have a massive sense of self-loathing. Even in my language, the way I’d speak to and about myself was negative! Much of my journey of healing actually happened with and around food (which is a longer story for another day). For now though, if you’re on Instagram, join me this month in some stories around getting more FREE.

To start off your weekend as well, I’ve got a recipe for these BOMB delicious gluten free waffles with berries and a cacoa honey. They are everything you need to begin your weekend well.

Gluten Free Waffles with Berries and Cacao Honey

2 1/2 cups King Arthur Gluten Free Pancake mix (you can use another Gluten free mix, but this is my absolute FAVE!)
2 Large eggs
1/4 cup melted butter
2 cups milk (I use oat milk, but any works!)
2 tablespoons sugar
1 1/2 tsp baking powder
2 Tbsp vanilla

Toppings:
1 cup raspberries
1 Tbsp Philosophie Cacao Magic
1/4 cup honey

Mix all ingredients in a large bowl.
Heat your waffle iron completely.
Spray with nonstick spray.
Pour about 3/4 cup of the mixture into your iron, and cook until golden.
Meanwhile, whisk your Philosophie into your honey.

When the waffle is done, drizzle or dip in your honey mixture and top with berries!
