whole 30 mango ice cream with caramelized bananas

Just a few short months ago, I took the Whole 30 challenge in an effort to focus on conscious health and pressing the restart button on my body from the inside out. It turned out to be such an incredible month of learning (and eating!) and I’m so glad I committed to the change.

My goal during my journey was to stay inspired and creative with my dishes, all while eating within the parameters of the Whole 30 diet. And that had to include sweet treats!

During one of my afternoons playing in the kitchen, I created this Whole 30 dessert that completely satisfied the need for something sweet.

This Whole 30-approved mango ice cream with caramelized bananas is a reminder that eating mindfully and consciously focusing on health and nourishing your body well, doesn’t have to be boring. Your dishes will only be as limiting as you allow them to be!

I encourage you to stop thinking that eating mindfully means missing out on the good stuff-on the contrary, I believe once we become mindful (and not just in food, but in all areas of our lives), that’s when things get good.

Whole 30 Mango Ice Cream with Caramelized Bananas

1 cup frozen mango
1 cup coconut milk
1 banana
1/2 tablespoon coconut oil
Almond butter
Coconut shavings

In a blender, combine your frozen mango and coconut milk until fully blended. Scoop out of the blender, and set aside. In a large saucepan, heat up your coconut oil. Slice your bananas and saute in the oil for 2 minutes on each side or until golden. Serve your caramelized bananas alongside a scoop of almond butter and a sprinkle of cinnamon and coconut shavings. Serve the whole dish with the mango ice cream! It’s delightful!
